Our zero-waste program goes beyond recycling. We've redesigned our entire operation to eliminate waste before it's created. Food scraps become compost for our partner farms. Used cooking oil is converted to biodiesel. Even our uniforms are made from recycled materials and are recyclable at end of life.

For the small amount of waste we can't eliminate, we've established partnerships with specialized recyclers who can process materials like wine corks, rubber bands, and even broken kitchen equipment.

We've implemented numerous energy-saving measures throughout our restaurant, reducing our energy consumption by 45% compared to similar establishments.

Our kitchen features induction cooktops that use 50% less energy than traditional gas ranges. LED lighting throughout the space consumes 75% less electricity than conventional bulbs. A state-of-the-art HVAC system with heat recovery technology maintains perfect comfort while minimizing energy use.
